Like all lettuce wrap recipes, this one is quick and simple. The only important caveat to this one is that the ground meat should be browned first; it’s important to the texture and flavor that your meat base is nice and crispy.

Ingredients:

  • ⅓ lb ground chicken/turkey/beef/pork
  • 1 Tbsp peanut oil (substitute with any nut or seed butter if needed)
  • ¼ onion minced
  • ⅓ cup diced pepper (red or green)
  • ⅓ 8 oz can of water chestnuts (drained and minced)
  • 1 Tbsp + 1 tsp crushed peanuts (crushed almonds or cashews work great too)
  • Lettuce
  • Sauce Ingredients:
    1 Tbsp soy sauce (substitute coconut aminos if you have a soy allergy)
    1 Tbsp hoisin sauce
    1 tsp sesame oil
    1 tsp rice vinegar
    1 tsp honey
    1 Tbsp sweet chili sauce
    ¼ tsp garlic powder
    ¼ tsp powdered ginger

Instructions:

  1. Mix all of your sauce ingredients together with a whisk.
  2. Heat 1 Tbsp peanut oil in a frying pan, then add ground meat.
  3. Once the meat begins to brown, add your onion to the pan. Cook for approx. 5 minutes or until the onion gains translucency.
  4. Add your ⅓ cup diced peppers & water chestnuts and cook about 5 minutes or until peppers begin to soften.
  5. Add sauce to the pan then simmer with low heat until all of the chicken and vegetables are heated through.
  6. Serve in your lettuce leaves!
  7. That’s a wrap!
